Did you know that you can eat fat and carbs, and lose weight? That is exactly what I did and lost 60 lbs.
Can it be true? Yes, and you can do it too. My blood pressure went down over 20 points too.

Our family, compared to the modern American way of eating, was pretty healthy already. We ate meat and vegetables for supper every night. Tried to buy, what we thought were “healthy” snacks. We stayed away from milk and bread.

My wife suffered from about 1-3 migraine headaches a week. I was 5’11” 265 lbs and still had high blood pressure, but for the most part we “felt” alright.

 It is funny how much pain you will put up with when that pain becomes such a part of your everyday life. It is almost like you forget what it was like to even feel good. I think we even redefine, to a point, what feeling well even is.
We swapped a lot of foods in our meal plans. I would estimate that we cut out about 5 lbs of chicken, 6-7 lbs of pork, and 2-3 lbs of beef from our weekly meals. We replaced all of this meat with wild caught salmon,  1 lb of grass feed beef, and an occasional whole chicken. Keep in mind that there are six of us in the house. We also traded out all pasta for rice noodles. We added quinoa, lentils, and beans.

Some of the other foods that we added were avocado, pistachios, peanuts, walnuts, banana, lemons, limes, oranges, kale, beets, collard greens, rutabaga, cilantro, green onion, turnips, coconut oil and lots of greens.

The key to this success is eating Healthy fats like olive oil, avocado, salmon, coconut oil and nuts. The carbs you eat should not come from processed foods, and NO sugar! The carbs need to be from fruits, legumes and beans. Your body can process these without turning it into fat. When you eat sugar, your liver processes it into triglycerides for example. So the key to eating both fats and carbs is NO SUGAR! Plant based menu plans include so many enzymes and vitamins that are easy for your body to process.

 With low-carb diets being all the rage, we were breaking all the rules. In the morning I eat one of two things for breakfast.

1. Oatmeal (not pre-packaged)

Mix with coconut oil, cinnamon, freeze-dried peaches or strawberries, banana chips, chopped walnuts, and stevia extract. Pour warm water over as needed. Stir and enjoy.

 2. Blueberries (frozen)
Mix blueberries with coconut oil, cinnamon, chia seeds, flax seeds, chopped walnuts, and stevia extract. Warm in oven for 10-15 minutes.

I always drink lemon water in the morning.

 For lunch I usually eat bananas, apples, peanuts.

Every day I take a good multi-vitamin, 400-1600 mg of magnesium, 1200 mg of fish oil, olive leaf extract, l-arginine, 4000 mg of vitamin c, vitamin b-12, and vitamin d-3.
